Thses delicious Breakfast Tacos are ready in less than 10 minutes and stuffed with scrambled eggs, turkey bacon, and hash brown potatoes. Add all your favorite toppings!

Ingredients

4 slices turkey bacon, chopped
3/4 cup shredded hash brown potatoes
2 green onions, chopped
4 eggs, whisked
4 corn tortillas
Salt and pepper
1/4 cup salsa

Method

Heat a nonstick skillet over medium high heat. Add the bacon and cook for 2-3 minutes until beginning to get crispy.

Add the potatoes and green onions. Cook for 3-4 minutes until they begin to crisp.

Push the potatoes, bacon, and green onions to one side of the pan. Spray with cooking spray and add the eggs. Let cook for a couple of minutes and then begin to scramble with the potatoes, bacon, and green onions. Cook to your liking.

Warm the corn tortillas. Serve with the eggs and all your favorite toppings.
