Ingredients

1 green apple
2 ripe bananas
100 g natural yogurt
80 g melted butter
2 eggs
150 g blueberries
50 g oat flakes
250 g spelt flour
1 package baking powder
1 tbsp JS Oatmeal Spice
80 g cashews
70 g ground pistachios
40 g rolled oats
30 g melted butter
2 tbsp spelt flour

Method

Preheat the oven to 160 °C.

For the topping, roughly chop the cashews and mix with the remaining ingredients and set aside.

Peel and grate the apple. Place the banana in a mixing bowl and mash with a fork. Add the yogurt, butter, eggs, blueberries, oatmeal and apple and mix thoroughly. Season with Oatmeal Spice. Then fold in the flour and baking powder.

Divide the batter into 12 muffin cups and top with the nut topping. Place the muffins in the oven for 25 minutes.
