Black Bean Salad recipe


This is a yummy salad with black beans, veggies, and a tangy dressing. It has beans, corn, and a special twist with mango! It's colorful and fun to eat. You can make it for lunch or dinner.


1 cup quinoa
2 cups water
1 cup frozen corn, thawed
1 tablespoon lime juice
1 teaspoon apple cider vinegar
1/2 teaspoon ground cumin
2 tablespoons olive oil
1 (15 ounce) can black beans, drained and rinsed
1 medium red bell pepper, seeded and chopped
1/2 medium red onion, chopped
1/3 cup chopped fresh cilantro
1 ripe mango, peeled and diced
Salt and ground black pepper to taste


Rinse the quinoa under cold water and drain.
In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer until the water is absorbed and quinoa is fluffy, about 15 minutes.
In a large bowl, whisk together the lime juice, apple cider vinegar, cumin, and olive oil.
Add the black beans, red bell pepper, red onion, cilantro, and mango to the bowl with the dressing. Toss to combine.
Once the quinoa is cooked, let it cool slightly, then add it to the bowl with the other ingredients. Mix well.
Season the salad with salt and pepper to taste. Serve immediately or chill in the refrigerator before serving.
