Black Bean Patties with Spicy Guacamole & Charred Corn recipe

These black bean patties are crispy and full of flavor, paired with a spicy guacamole and sweet charred corn. It's a yummy meal that's easy to make. You mash beans, mix with spices, and cook until crispy. Then, mix avocado with lime and spices for guacamole, and cook corn until it's a bit brown.

Ingredients

1 large ripe avocado
1 x (15 oz) can of black beans
1/4 cup fresh cilantro, chopped
1 large egg
1 1/2 cups frozen corn kernels
1 clove garlic, minced
1 small red onion, finely chopped
1 lime, juiced
1/4 teaspoon black pepper
1/2 teaspoon ground cumin
3/4 cup panko bread crumbs
1/2 teaspoon salt
2 tablespoons olive oil
1/4 teaspoon chili flakes

Method

Drain and rinse the black beans thoroughly.

In a large bowl, mash the black beans with a fork until mostly smooth.

Add the egg, half of the chopped cilantro, panko bread crumbs, cumin, salt, and black pepper to the mashed beans. Stir until the mixture is well combined.

Form the bean mixture into 8 equal-sized patties and set aside on a plate.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until they start to char, about 5-7 minutes. Remove the corn from the skillet and set aside.

In the same skillet, add the remaining olive oil. Place the patties in the skillet and cook for about 4 minutes on each side, or until they are browned and crispy.

While the patties cook, mash the avocado in a bowl. Stir in the remaining cilantro, lime juice, minced garlic, red onion, chili flakes, and a pinch of salt to make the spicy guacamole.

Serve the black bean patties with a dollop of the spicy guacamole and a side of the charred corn.
