This is a yummy toast with soft cheese and sweet berries. You put whipped cheese, almond, and berry mix on bread. It's a little sweet and very tasty. You can make it for breakfast or a snack.

Ingredients

1 cup ricotta cheese

1 tablespoon almond extract

2 tablespoons honey, plus extra for drizzling

1/4 teaspoon vanilla extract

1/4 cup almonds, sliced

2 cups mixed berries (strawberries, blueberries, raspberries)

8 slices of sourdough bread

1/4 teaspoon nutmeg

Method

In a bowl, mix 1 cup of ricotta cheese with 1 tablespoon of almond extract, 2 tablespoons of honey, and 1/4 teaspoon of vanilla extract until smooth to make whipped ricotta.

In another bowl, gently mix 2 cups of mixed berries with a drizzle of honey and 1/4 teaspoon of nutmeg until the berries are coated.

Toast 8 slices of sourdough bread until they are golden brown.

Spread the whipped ricotta mixture on the toasted bread slices.

Top the ricotta with the honey-nutmeg berry mixture.

Garnish each toast with sliced almonds.

Drizzle a little more honey over the toasts if you like them sweeter.

Serve immediately and enjoy your berry almond toast!
