Beef Tacos with Charred Corn, Spinach, and Chipotle Mayo recipe

This is a yummy taco recipe with juicy beef, sweet corn, and fresh spinach. It has a special sauce made from chipotle peppers that is a little spicy. You put everything in a soft tortilla and eat it with your hands!

Ingredients

8 small flour tortillas
500 g flank steak
30 ml chipotle seasoning
2 ears of corn
100 g baby spinach
120 ml chipotle mayonnaise
15 ml olive oil
1/4 tsp salt
1 lime, cut into wedges

Shuck the corn and grill over medium-high heat until charred in spots, about 10 minutes. Let cool slightly and then cut the kernels off the cob.

Rinse and dry the baby spinach leaves.

Heat a skillet over medium-high heat. Rub the flank steak with chipotle seasoning and salt.

Add olive oil to the skillet and sear the steak for about 3-4 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes and then slice thinly against the grain.

Warm the flour tortillas in a dry skillet or microwave until soft and pliable.

Spread a tablespoon of chipotle mayonnaise on each tortilla, then add a handful of baby spinach, some charred corn, and slices of steak.

Serve the tacos with lime wedges to squeeze over the top.
