Beef Salad with Mixed Greens, Radishes & Sesame Dressing recipe

This is a yummy salad with thin slices of beef, mixed greens, and radishes. It has a tasty dressing made with lime and sesame. You put peanuts on top for a little crunch. It's good for lunch or dinner!

Ingredients

1 lb flank steak
1 tbsp soy sauce
1 tbsp fish sauce
2 tbsp virgin coconut oil
1/2 cup mixed salad greens
1/2 medium head napa cabbage, thinly sliced
1 English cucumber, thinly sliced
4 radishes, thinly sliced
1/4 cup roasted unsalted peanuts, chopped
2 tbsp toasted sesame oil
1 tbsp rice vinegar
1/2 tsp crushed red pepper
1/4 tsp salt
2 limes, juiced
1 tbsp honey

Method

Wash and dry the fresh produce.

Juice the limes into a bowl and set aside.

Place the steak in a shallow dish, pierce with a fork, and pour soy sauce, fish sauce, and half of the lime juice over it. Let it marinate for 10 minutes.

Heat a grill pan or skillet over medium-high heat and coat with coconut oil.

Pat the steak dry and cook to your desired doneness, about 3-4 minutes per side for medium-rare. Transfer to a plate and cover loosely with foil.

In a small bowl, whisk together the remaining lime juice, sesame oil, rice vinegar, honey, crushed red pepper, and salt to create the dressing.

In a large bowl, combine mixed salad greens, sliced napa cabbage, cucumber, and radishes.

Pour the dressing over the salad and toss to coat evenly.

Chop the peanuts and set aside.

Slice the steak against the grain into thin strips.

To serve, divide the salad among plates, top with steak slices, and sprinkle with chopped peanuts.
