Beef & Peach Salad with Mixed Greens & Sesame recipe

This is a yummy salad with thin slices of beef, sweet peaches, and fresh greens. It has a tasty dressing made from soy sauce and honey. You put everything on a plate and sprinkle sesame seeds on top.

Ingredients

1 x 1 inch piece ginger root
1 small bunch green onions (scallions)
1 lime
2 ripe peaches
1 yellow bell pepper
680 grams flank steak
1 bag mixed salad greens (about 150 grams)
Black pepper
Extra virgin olive oil
2 tablespoons honey
Salt
1 tablespoon toasted sesame seeds
3 tablespoons soy sauce
1 tablespoon rice vinegar

Method

Wash, dry, peel, and mince the ginger.

Preheat a skillet over medium-high heat.

Season the flank steak generously with salt and pepper on both sides.

Coat the bottom of the skillet with oil. Add the steak and cook until desired doneness, about 3-4 minutes per side for medium-rare. Transfer to a plate and loosely cover with foil.

Wash, dry, and juice the lime into a small bowl. Add the minced ginger, 2 tablespoons of olive oil, honey, soy sauce, and rice vinegar. Whisk to combine the dressing and set aside.

Wash and dry the mixed salad greens and transfer to a large bowl.

Wash, dry, and slice the peaches into thin wedges. Add to the bowl with the greens.

Wash, dry, and seed the yellow bell pepper. Julienne (cut into thin strips) and add to the bowl.

Trim and discard the root ends of the green onions, chop, and add to the bowl.

Thinly slice the steak against the grain.

To serve, arrange the salad on plates and top with steak slices. Drizzle with the dressing and sprinkle with toasted sesame seeds.
