Ingredients

1 (142 g) package baby spinach
680 g lean ground beef
680 g sweet potatoes
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
2 tablespoons ketchup
1 tablespoon olive oil
1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter
Salt to taste
Black pepper to taste

Method

1
Preheat your grill pan or skillet over medium-high heat.
2
In a large bowl, mix the ground beef with ketchup, onion powder, smoked paprika, salt, and black pepper until well combined.
3
Form the beef mixture into 8 equal-sized patties.
4
Add olive oil to the hot pan and swirl to coat the bottom.
5
Place the beef patties in the pan and cook for about 4 minutes per side, or until they reach your desired doneness. Transfer the patties to a plate and cover to keep warm.
6
While the beef cooks, peel and cut the sweet potatoes into chunks.
7
Boil the sweet potato chunks in a pot of salted water until they are soft, about 15 minutes.
8
Drain the sweet potatoes and return them to the pot. Add butter, cinnamon, salt, and pepper. Mash until smooth and well combined.
9
Wash and dry the baby spinach if it's not pre-washed.
10
To serve, place a portion of baby spinach on each plate, top with two beef patties, and serve the spiced sweet potato mash on the side.
