Beef and Zucchini Stir-Fry with Basil recipe

This is a yummy dish with beef and zucchini. It has fresh basil and a touch of soy sauce. You cook it in a pan. It is good for dinner and not too hard to make.

Ingredients

1 tbsp olive oil
1.5 lb lean ground beef
4 medium zucchini, cut into half-moons
1 large red onion, diced
5 cloves garlic, minced
1 tsp ground coriander
1/2 tsp smoked paprika
2 tbsp soy sauce
1/2 tsp black pepper
1/4 tsp salt
1 small bunch basil, leaves torn

Method

Wash and dry the zucchini and basil. Cut the zucchini into half-moons and tear the basil leaves.

Peel and dice the red onion and mince the garlic.

Heat olive oil in a large skillet over medium-high heat.

Add the ground beef to the skillet and cook until browned, about 5 minutes, breaking it apart with a spoon.

Transfer the cooked beef to a plate and set aside.

In the same skillet, add the zucchini, red onion, and garlic. Cook for about 5 minutes, until the vegetables are tender.

Stir in the ground coriander, smoked paprika, soy sauce, black pepper, and salt.

Return the beef to the skillet and add the torn basil leaves. Cook for another 2 minutes, stirring to combine all the ingredients.

Taste and adjust seasoning if necessary.

Serve the beef and zucchini stir-fry hot, garnished with extra basil if desired.
