Beef and Zucchini Noodle Bake recipe


This is a yummy dish with layers of beef, zucchini, and cheese. It's like lasagna but uses zucchini instead of pasta. We cook beef with garlic, add herbs, and layer it with zucchini and cheese. Then we bake it until it's bubbly and brown.


1 (5 oz) package baby spinach
6 fl oz chicken or vegetable broth
1 (14.5 oz) can diced tomatoes, drained
1 small package fresh basil, divided
3 cloves garlic, minced
1 small bunch Italian parsley, minced
1 lb lean ground turkey
4 oz mozzarella cheese, sliced
3 oz Parmesan cheese, grated
1.5 tbsp tomato paste
2 large zucchini squash
1/4 tsp black pepper
1/2 tsp salt
1 tbsp olive oil


Preheat oven to 400°F.
Heat a skillet over medium-high heat with 1 tbsp olive oil.
Add the ground turkey and minced garlic to the skillet. Cook until the turkey is browned, about 5-7 minutes.
Stir in the tomato paste and cook for another minute.
Pour in the diced tomatoes and broth, then bring to a simmer.
Chop half of the basil and all of the parsley, then add to the skillet along with the spinach, salt, and pepper. Cook for 3-4 minutes until the spinach wilts.
Trim the ends of the zucchini and slice them lengthwise into thin strips using a mandoline or a sharp knife.
In a baking dish, layer half of the zucchini strips to cover the bottom.
Spread half of the turkey mixture over the zucchini, then repeat with another layer of zucchini and the remaining turkey mixture.
Top with sliced mozzarella and grated Parmesan cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
If desired, broil for the last 2-3 minutes for a golden-brown top.
Garnish with the remaining fresh basil leaves before serving.
