Beef and Vegetable Stir Fry with Sweet Peppers recipe

This is a yummy dish with beef and veggies. It has colorful peppers and a tasty sauce. You cook the beef until it's brown, then mix in the veggies and sauce. It's good for dinner and not too hard to make.

Ingredients

1 lb Brussels sprouts
1 large red bell pepper
1 large yellow bell pepper
3 cloves garlic
1 x 1 inch piece ginger root
1/2 small bunch green onions (scallions)
1 lb sirloin steak
2 tablespoons cornstarch
3 tablespoons rice vinegar
4 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon honey
1/4 cup water

Method

Wash and trim the Brussels sprouts, then cut them in half.

Wash the bell peppers, remove the seeds, and slice them into strips.

Peel and mince the garlic and ginger.

Slice the green onions, separating the white parts from the green parts.

In a bowl, mix the soy sauce, rice vinegar, water, cornstarch, and honey to make the sauce.

Heat a skillet over medium-high heat and add 1 tablespoon of sesame oil.

Slice the sirloin steak into strips and cook in the skillet until browned, about 2-3 minutes per side. Remove the steak and set aside.

Add the remaining sesame oil to the skillet, then add the Brussels sprouts and bell pepper strips. Cook for about 3-4 minutes, until they start to soften.

Add the garlic, ginger, and white parts of the green onions to the skillet. Cook for another minute until fragrant.

Return the steak to the skillet and pour in the sauce. Cook for 2-3 minutes, stirring occasionally, until the sauce thickens.

Serve the stir fry garnished with the green parts of the green onions.
