Beef and Vegetable Stir Fry with Oyster Sauce recipe

This is a yummy dish with beef and veggies. You cook thin beef strips with asparagus and yellow peppers. Then you mix in a tasty sauce and cook it all together. It's good for dinner and not too hard to make!

Ingredients

1 lb flank steak
1 bunch asparagus, ends trimmed and cut into 2 inch pieces
2 yellow bell peppers, seeded and cut into strips
5 tbsp oyster sauce
2 tbsp vegetable oil
1 tbsp cornstarch
1/4 cup water
1 tbsp honey
3 cloves garlic, minced
1 inch piece ginger, minced
1/4 tsp crushed red pepper flakes
2 tbsp soy sauce
1 tbsp rice vinegar

Method

In a bowl, whisk together the cornstarch and water until smooth. Add the soy sauce, oyster sauce, honey, rice vinegar, and red pepper flakes. Stir to combine and set aside.

Wash the asparagus and yellow bell peppers. Cut the asparagus into 2 inch pieces and the bell peppers into strips.

Peel and mince the garlic and ginger.

Slice the flank steak against the grain into thin strips.

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the beef strips and cook until browned, about 2 minutes per side. Transfer the beef to a plate.

In the same skillet, add the remaining tablespoon of oil. Add the asparagus, bell peppers, ginger, and garlic. Cook, stirring often, until the vegetables are tender-crisp, about 3-4 minutes.

Return the beef to the skillet with the vegetables. Pour the sauce over the top and cook, stirring, until the sauce has thickened and everything is well coated, about 2 minutes.

Serve the beef and vegetable stir fry hot, with rice if desired.
