Beef and Vegetable Stir-Fry with Jasmine Rice recipe

This is a yummy dish with rice, beef, and veggies. You cook rice and stir-fry beef with carrots and green beans. Then mix them with a tasty sauce. It's good for dinner and not too hard to make!

Ingredients

1 1/4 cups jasmine rice
5 medium carrots
5 cloves garlic
2 tablespoons grated ginger
1 lb green beans
1 bunch green onions
1 lb ground turkey
1/4 teaspoon black pepper
2 tablespoons chili garlic sauce
1 tablespoon cornstarch
2 tablespoons rice vinegar
3/4 teaspoon salt
1 tablespoon sesame seeds
1/4 cup soy sauce
2 tablespoons vegetable oil

Method

Rinse the jasmine rice under cold water, then cook with 2 1/2 cups water and 1/2 teaspoon salt. Bring to a boil, then simmer covered for 18 minutes.

Peel and slice carrots into thin rounds. Trim green beans and cut into 1-inch pieces. Mince garlic and grate ginger.

In a bowl, whisk together soy sauce, cornstarch, rice vinegar, chili garlic sauce, and 1/4 cup water to make the sauce.

Heat vegetable oil in a large skillet over medium-high heat. Add carrots and green beans, cook for 7 minutes until tender.

Add ground turkey to the skillet with vegetables, season with black pepper and remaining salt. Cook until browned, about 6 minutes.

Pour the sauce over the turkey and vegetables, add sesame seeds, and cook for another 2 minutes until the sauce thickens.

Slice green onions and stir into the cooked rice.

Serve the stir-fry over the green onion rice. Enjoy your meal!
