Beef and Vegetable Stir Fry with Brown Rice recipe

This is a yummy dish with beef, veggies, and rice. You cook rice and stir fry beef with green beans and peppers. Then mix in a tasty sauce and basil leaves. Put the stir fry on the rice to eat it.

Ingredients

1 cup brown rice
1 tablespoon olive oil
1 pound lean ground beef
1/2 pound green beans, trimmed and halved
2 red bell peppers, seeded and sliced
1/2 cup fresh basil leaves
3 cloves garlic, minced
1 tablespoon grated ginger
2 tablespoons low-sodium soy sauce
1 tablespoon oyster sauce
1 tablespoon honey
1/4 teaspoon ground black pepper
1 tablespoon sesame seeds

Method

Rinse the brown rice in a colander and transfer to a medium saucepan. Add 2 cups of water and a pinch of salt; bring to a boil.

Once boiling, reduce the heat to low, cover, and simmer until the rice is tender and the water is absorbed, about 30 to 35 minutes.

While the rice cooks, heat the olive oil in a large skillet over medium-high heat.

Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned, about 5 minutes.

Transfer the cooked beef to a plate and set aside, keeping the skillet on the heat.

Add the green beans and bell peppers to the skillet and stir-fry until they are tender-crisp, about 4 minutes.

Add the minced garlic and grated ginger to the vegetables and cook for another minute until fragrant.

In a small bowl, whisk together the soy sauce, oyster sauce, honey, and black pepper.

Return the beef to the skillet with the vegetables and pour the sauce over the mixture. Stir well to combine and heat through, about 2 minutes.

Remove the skillet from the heat and stir in the fresh basil leaves and sesame seeds.

Fluff the cooked brown rice with a fork and divide it among plates.

Top the rice with the beef and vegetable stir fry and serve immediately.
