This is a warm, hearty chili made with ground beef, colorful bell peppers, and green beans. It's seasoned with spices and topped with sour cream for a creamy finish. It's a yummy dinner that's perfect for a cozy night!

Ingredients

3 x (14.5 oz) cans diced tomatoes with green chilis
5 cloves garlic, minced
1 lb green beans, trimmed and cut into 1-inch pieces
1 bunch green onions, chopped
2 lb lean ground beef
3/4 cup sour cream
2 yellow bell peppers, diced
1 large yellow onion, diced
1 tsp black pepper
2 tbsp chili powder
1 1/2 tsp salt
2 tbsp olive oil

Method

Wash and dry all fresh produce.

Prepare the green beans and bell peppers, and dice the onion and garlic as described in the ingredients list.

Heat a large saucepan over medium-high heat with 2 tablespoons of olive oil.

Add the ground beef to the saucepan; cook, breaking it apart with a spoon, until browned and crumbly, about 5 minutes. Transfer to a bowl and set aside.

In the same saucepan, add the prepared vegetables. Cook, stirring occasionally, until they are softened, about 7 minutes.

Return the beef to the saucepan. Season with chili powder, salt, and black pepper. Stir to combine everything well.

Pour in the diced tomatoes with their juices and bring the mixture to a boil. Then, reduce the heat to a simmer and let it cook for 20 minutes, stirring occasionally.

While the chili simmers, chop the green onions, separating the white and green parts.

Stir the white parts of the green onions into the chili.

Once the chili is done, let it cool slightly before stirring in the sour cream.

Serve the chili in bowls, garnished with the green parts of the green onions.
