This is a yummy sandwich with beef and shrimp, melted cheese, and a spicy sauce. It has cooked onions and is toasted until golden. It's a warm, cheesy, and a little bit spicy treat that's perfect for lunch or dinner.

Ingredients

2 large onions, thinly sliced
8 slices of sourdough bread
50 g unsalted butter
4 x 150 g ground beef patties
2 tbsp spicy mayo
16 slices of cheddar cheese
200 g cooked shrimp, peeled and deveined
Salt and pepper to taste
Vegetable oil for cooking

Method

Preheat your oven to 175°C (350°F).

In a pan over medium heat, add a splash of vegetable oil and cook the onions for 15-20 minutes until they are soft and golden.

While the onions are cooking, season the beef patties with salt and pepper.

In another pan, melt half of the butter over medium-high heat and cook the beef patties for about 3-4 minutes on each side, or until they have a nice sear.

Remove the patties and set aside. In the same pan, quickly toss the shrimp until just heated through, about 1-2 minutes, then remove from heat.

Spread the remaining butter on one side of each bread slice. Toast the buttered sides in a pan until golden brown.

To assemble the sandwiches, spread spicy mayo on the non-toasted side of four bread slices.

Layer each with two slices of cheddar cheese, a beef patty, a quarter of the cooked onions, a handful of shrimp, and two more slices of cheddar cheese.

Top with the remaining bread slices, toasted side facing out.

Place the sandwiches on a baking sheet and bake in the preheated oven for 5 minutes, or until the cheese is melted and bubbly.

Serve the beef and shrimp melt sandwiches hot.
