This is a yummy dinner with colorful bell peppers filled with beef and rice, topped with cheese. It comes with a fresh mixed greens salad. You cook the beef with tasty spices and mix it with rice. Then you put it in the peppers and add cheese on top. Bake it until the cheese melts. The salad is easy with greens, tomatoes, and a simple dressing.

Ingredients

1/2 small bunch of cilantro
1 cup of grape tomatoes
1 lb of lean ground beef
1 lime
1 cup of cooked white rice
1 cup of shredded cheddar cheese
4 green bell peppers
4 cups of mixed greens
1/4 teaspoon of black pepper
1/4 teaspoon of cayenne pepper
1/2 teaspoon of chili powder
1/2 teaspoon of ground cumin
2 tablespoons of extra virgin olive oil
1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
1/4 teaspoon of paprika
1/2 teaspoon of salt

Preheat your oven to 375 degrees F (190 degrees C).

Wash and dry all the fresh produce.

Cut the tops off the green bell peppers and remove the seeds. Place them in a baking dish.

In a bowl, mix the cooked white rice with the ground cumin, chili powder, garlic powder, onion powder, paprika, salt, and black pepper.

Heat a skillet over medium-high heat and cook the ground beef until it's browned, about 5-6 minutes. Drain any excess fat.

Combine the cooked beef with the rice mixture and half of the chopped cilantro.

Stuff each bell pepper with the beef and rice mixture.

Sprinkle the shredded cheddar cheese on top of the stuffed peppers.

Bake in the preheated oven until the peppers are tender and the cheese is melted, about 15-20 minutes.

While the peppers are baking, make the salad. In a large bowl, whisk together the juice of 1 lime, 2 tablespoons of olive oil, and a pinch of salt and pepper to create a dressing.

Add the mixed greens and halved grape tomatoes to the bowl with the dressing. Toss to coat the salad evenly.

Serve the baked stuffed peppers with the mixed greens salad on the side. Enjoy!
