Beef and Kale Burger with Apple Parmesan Slaw recipe

This is a yummy burger with beef and kale. It has a special slaw made with apples and cheese. You make the burger and put it on a bun. Then you add the slaw on top. It's a fun meal for lunch or dinner!

Ingredients

1/2 cup Greek yogurt
2 Granny Smith apples
4 cloves garlic
1 bunch kale
1 lb lean ground beef
1 lemon
1 oz shaved Parmesan cheese
4 whole wheat buns
1/4 tsp black pepper
1 tbsp olive oil
1/2 tsp Dijon mustard
1/2 tsp salt

Method

Wash and dry the kale and apples. Peel and mince the garlic. Zest and juice the lemon.

In a large bowl, mix together the minced garlic, lemon zest, lemon juice, Greek yogurt, Dijon mustard, and a pinch of salt and pepper to create the dressing.

Core the apples and cut them into thin slices. Add the apple slices to the dressing and toss to coat.

Remove the stems from the kale and chop the leaves into bite-sized pieces. Add the kale to the dressing with the apples and toss everything together. Set aside to let the flavors meld.

In another bowl, combine the ground beef with half of the minced garlic, salt, and pepper. Mix well and form into 4 equal-sized patties.

Heat a grill pan or skillet over medium-high heat and brush with olive oil. Cook the patties for about 5 minutes on each side or until they reach your desired doneness.

Grate the Parmesan cheese and set aside.

Toast the whole wheat buns on the grill pan if you like them crispy.

Build the burgers by placing a patty on the bottom half of each bun. Add a generous amount of the apple Parmesan slaw on top of the patty and sprinkle with shaved Parmesan cheese.

Cover with the top half of the bun and serve immediately with any extra slaw on the side.
