Beef and Broccoli Stir Fry recipe

Stashcook

This is a yummy dish with beef and green broccoli. You cook it in a pot that uses pressure to cook things fast. It's like a quick, homemade version of a dish you might get at a Chinese restaurant.

Ingredients

1.5 pounds round steak, cut into bite-size pieces
1 cup beef broth
1/3 cup low sodium soy sauce
1 Tablespoon minced garlic
1/4 cup brown sugar
2 Tablespoons olive oil
1 Tablespoon sesame oil
2 Tablespoons cornstarch
2 Tablespoons cold water
1 large broccoli crown, cut into florets
1 small onion, diced
1 Tablespoon sesame seeds (optional for garnish)

Method

1
In an electric pressure cooker, add the olive oil and sesame oil, and set to sauté mode. Add the diced onion and minced garlic, and cook until soft and translucent.
2
Add the bite-size pieces of steak to the pot and brown them slightly.
3
In a small mixing bowl, whisk together the beef broth, soy sauce, and brown sugar. Pour this mixture over the steak in the pressure cooker.
4
Seal the pressure cooker and set to cook on high pressure for 10 minutes. After cooking, do a quick release to release the pressure.
5
While the beef is cooking, steam the broccoli florets until tender, about 3-4 minutes, and set aside.
6
Mix the cornstarch with cold water to create a slurry. Once the beef is done, switch the pressure cooker back to sauté mode and stir in the cornstarch slurry. Continue to cook until the sauce thickens.
7
Add the steamed broccoli to the pot, stirring to combine with the beef and sauce.
8
If desired, sprinkle with sesame seeds for garnish.
9
Serve immediately over rice or your choice of side.
