This recipe is for delicious BBQ pulled pork sliders. You cook pork with spices and BBQ sauce until it's really tender. Then you put the pork on small buns with a tasty coleslaw. It's a fun meal for a party or family dinner.

Ingredients

2 kg Boneless Skinless Pork Shoulder
40 g Ground Coffee
40 g Salt
40 g Brown Sugar
20 g Garlic Powder
20 g Black Pepper
10 g Paprika
10 g Oregano
1 Can of Root Beer
1 Small Red Cabbage
1 Bunch of Spring Onions
3 Carrots
1 Tsp Honey
1/2 Tsp Salt
20 ml Apple Cider Vinegar
200 g Greek Yogurt
16 Slider Buns
150 g BBQ Sauce

Method

1
Preheat your oven to 250°C (480°F). Place a large, deep pot with a lid into the oven to heat.
2
Mix together the ground coffee, salt, brown sugar, garlic powder, black pepper, paprika, and oregano to create your dry rub.
3
Rub the pork shoulder all over with about 5-6 tablespoons of the dry rub mixture. Let it sit for an hour to allow the flavors to penetrate.
4
Place the pork into the preheated pot and sear for 10 minutes to form a crust.
5
Pour the can of root beer around the pork, cover with the lid, and reduce the oven temperature to 150°C (300°F). Cook for 4 hours until the pork is tender.
6
While the pork is cooking, make the slaw. Peel the carrots into ribbons, thinly slice the red cabbage and spring onions, and combine in a colander. Drizzle with honey, salt, and apple cider vinegar. Let it sit to drain for an hour.
7
Transfer the slaw vegetables to a large bowl and mix in the Greek yogurt.
8
After the pork has cooked, remove it from the oven and pull it apart using two forks. Mix in the BBQ sauce.
9
Toast the slider buns and assemble the sliders by placing a generous amount of pulled pork on the bottom bun, topping it with the coleslaw, and then the top bun.
