BBQ Pulled Pork Sandwich recipe

This is a yummy sandwich with tender pork that's been cooked slowly with sweet and tangy flavors. You put the pork on a bun and can add things like coleslaw or pickles.

Ingredients

1 (3-4 lb) boneless pork shoulder, excess fat trimmed
1 Tbsp. kosher salt
1 Tbsp. smoked paprika
1 Tbsp. freshly ground black pepper
1 Tbsp. garlic powder
2 tsp. dry mustard
2 tsp. ground coriander
1 tsp. ground cumin
2 Tbsp. olive oil
1 large onion, sliced
8 garlic cloves, minced
1 (12 oz.) can root beer
1/2 cup apple cider vinegar
1 cup barbecue sauce, plus more for serving
8 hamburger buns, warmed
Coleslaw, for serving
Pickle slices, for serving

Method

Combine the salt, smoked paprika, black pepper, garlic powder, dry mustard, coriander, and cumin in a bowl.

Rub the spice mixture all over the pork shoulder and let it sit for at least 1 hour, or overnight in the fridge if you have time.

Heat olive oil in a large skillet over medium heat and brown the pork on all sides, about 10 minutes total.

Place the pork in a slow cooker and add the sliced onion, minced garlic, and root beer.

Cover and cook on high for 4 to 4.5 hours, until the pork is very tender.

Remove the pork and let it rest on a plate. Discard large pieces of onion and drain all but 1 cup of the cooking liquid.

Shred the pork with two forks and return it to the slow cooker. Season with more salt if needed.

Stir in the apple cider vinegar and 1 cup of barbecue sauce, mixing well.

Serve the pulled pork on warmed hamburger buns with extra barbecue sauce, coleslaw, and pickle slices.
