BBQ Pulled Chicken Sandwich recipe


This is a yummy sandwich with chicken that's cooked until it's really soft. It has a special spicy sauce and is put on a toasted bun with fresh salad and a tasty avocado mix.


8 boneless chicken thighs
1.5 Tbsp smoked paprika
150 ml tomato sauce
3 Tbsp honey
1 large red onion
1 lemon
2 ripe avocados
1 small bunch of cilantro
1 head of butter lettuce
4 whole wheat buns


In your slow cooker, combine the chicken thighs, smoked paprika, tomato sauce, honey, and half of the chopped red onion. Season with salt and pepper, then stir to ensure the chicken is well coated. Set to cook on 'Low' for 6 hours.
When the chicken is cooked, use two forks to shred it directly in the slow cooker.
For the avocado spread, in a bowl, mash the avocados with a fork until you get a creamy yet slightly chunky texture. Finely chop the cilantro and add it to the bowl along with the juice of the lemon, and a pinch of salt and pepper. Stir to combine.
Lightly toast the whole wheat buns. Spread a layer of the avocado mixture on the bottom bun, then add a generous amount of the pulled chicken. Add a few leaves of butter lettuce and finish with the top bun. Serve immediately.
