1/2 Tsp Garlic Powder
1/2 Tsp Ground Black Pepper
1/2 Tsp Sea Salt
1 Tsp Paprika
2 Cloves of Garlic, minced
1 Red Onion, sliced
1 Orange, juiced
5 Tbsp BBQ Sauce, divided
1 French Baguette
30 g Unsalted Butter
60 g Monterey Jack Cheese, sliced
100 g Arugula
2 Tbsp Olive Oil

Method

1
Preheat your oven to 150°C (300°F).
2
In a bowl, mix together the chili powder, ground coriander, garlic powder, black pepper, sea salt, and paprika.
3
Rub the spice mixture all over the beef brisket.
4
Heat a heavy pan over high heat and add 2 tablespoons of olive oil. Add the minced garlic and sear the brisket on all sides until browned.
5
Add the sliced red onion to the pan and fry for 2 minutes.
6
Pour in 300ml of water and the orange juice, then add the orange halves to the pan with a pinch of salt.
7
Bring the liquid to a boil, cover the pan with a lid, and place it in the oven for 3 hours.
8
Remove the brisket from the pan and shred it using two forks.
9
Take 1 tablespoon of BBQ sauce and add it to the brisket cooking liquid. Simmer and reduce on the stove to create a sauce.
10
Mix the shredded brisket with an additional 3 tablespoons of BBQ sauce.
11
Once the sauce has thickened and reduced, combine it with the brisket.
12
Cut the baguette into 4 equal parts and slice each piece open.
13
Spread the inside with butter, then layer with the brisket and Monterey Jack cheese slices.
14
Place under the grill until the cheese melts.
15
Add arugula on top of the melted cheese and drizzle with the remaining 1 tablespoon of BBQ sauce.
16
Close the sandwiches and serve warm.
