These bars are like a yummy cake with bananas and peanut butter. They are sweet and soft. You mix bananas with peanut butter and some other things, bake it, and get a tasty treat!

Ingredients

2 large overripe bananas, mashed
1 large egg
1/2 cup creamy peanut butter
1/3 cup maple syrup
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2/3 cup chocolate chips
1/4 teaspoon salt (if your peanut butter is unsalted)
1/4 cup chopped peanuts (optional for topping)

Method

Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper or grease well.

In a large mixing bowl, mash the bananas until smooth. Add the egg, peanut butter, maple syrup, and vanilla extract and mix until well combined.

In a separate medium mixing bowl, whisk together the flour, baking soda, baking powder, and salt (if using). Stir in the chocolate chips.

Add the dry ingredients to the peanut butter and banana mixture and gently fold together until just combined. Be careful not to overmix.

Pour the batter into the prepared baking pan and spread out evenly. Sprinkle chopped peanuts on top if desired.

Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.

Allow the banana bars to cool on a cooling rack for at least 10 minutes. Then, carefully remove the bars from the pan using the parchment paper to lift them out, if necessary.

Slice into 12 bars and serve once completely cooled.
