Easy to make, tons of banana flavor, and freezer friendly! These banana pancakes are always a family favorite.
Ingredients
1.5 cups white whole wheat flour
2 tsp baking powder
1/2 tsp cinnamon
1/8 tsp salt
2 bananas, mashed
1 cup nonfat milk (or alnond milk)
2 eggs
1 tbsp coconut oil (melted or melted butter)
1 tsp vanilla extract
1/3 cup chocolate chips (I prefer mini chocolate chips)

In a large bowl mix together the dry ingredients - flour, baking powder, cinnamon, and salt. In another bowl, stir together the mashed bananas, milk, eggs, coconut oil, and vanilla extract in a bowl.

Combine the wet and dry ingredients and mix until just combined. Fold in the chocolate chips.

Heat a griddle (or skillet) over medium-low heat. Spray with cooking spray or brush with oil. Add about 1/4-1/3 cup for each pancake cook for 2-3 minutes until the air bubbles begin to pop and the bottom is golden brown. Repeat until all the pancakes are cooked.
