Balsamic Glazed Mushroom and Spinach Bagel recipe

This is a yummy sandwich with mushrooms and spinach on a bagel. The mushrooms are cooked with sweet balsamic glaze. It's a tasty lunch you can make fast!

Ingredients

2 Tbsp Balsamic Vinegar
1 Tbsp Honey
1 Tbsp Olive Oil
1 Tsp Dijon Mustard
1/2 Tsp Garlic Powder
1/4 Tsp Salt
1/4 Tsp Black Pepper
2 Whole Wheat Bagels
4 Large Cremini Mushrooms
1 Cup Fresh Spinach
2 Tbsp Hummus
4 Slices of Red Onion

Method

Preheat your oven to 350°F (175°C).

Slice the mushrooms to about 1/4 inch thick and place them in a bowl.

In a small bowl, whisk together balsamic vinegar, honey, olive oil, Dijon mustard, garlic powder, salt, and black pepper to create the glaze.

Pour the glaze over the mushrooms and toss to coat them evenly.

Spread the mushrooms on a baking sheet lined with parchment paper and roast in the oven for 12 minutes, until tender and caramelized.

While the mushrooms are roasting, cut the bagels in half and toast them until they are crispy.

Spread hummus on each bagel half, then layer with fresh spinach and roasted mushrooms.

Add two slices of red onion to each bagel, close the sandwiches, and serve warm.
