Balsamic Glazed Chicken Salad with Blueberries & Almonds recipe


This is a yummy salad with grilled chicken, sweet blueberries, and crunchy almonds. It has green lettuce, and a tasty balsamic dressing. You can make it for lunch or dinner. It's good for you and tastes great!


2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 cup extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb chicken breasts, boneless skinless
2 heads romaine lettuce
1 cup fresh blueberries
2 avocados
1/2 cup sliced almonds
1/4 cup crumbled feta cheese


Preheat a grill pan or outdoor grill over medium-high heat.
In a large bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, and pepper. Slowly drizzle in olive oil while whisking to create the dressing.
Pat the chicken dry with paper towels and season both sides with salt and pepper.
Grill the chicken until charred and cooked through, about 5-6 minutes per side. Transfer to a plate and cover with foil to keep warm.
Wash and dry the romaine lettuce, then chop into bite-sized pieces and add to a large salad bowl.
Halve and pit the avocados, then cut into slices and add to the salad bowl.
Add the fresh blueberries and sliced almonds to the salad bowl.
Thinly slice the grilled chicken and add to the salad.
Drizzle the balsamic dressing over the salad and toss to combine everything well.
Sprinkle crumbled feta cheese over the salad before serving.
Divide the salad among plates or bowls and enjoy!
