Baked Zucchini, Turkey & Mozzarella Moussaka with Mixed Greens recipe


This is a yummy dish with layers of zucchini, turkey, and cheese. It's baked until bubbly and served with a fresh salad. It's like a lasagna but with zucchini and turkey!


3 medium zucchinis
1 kg ground turkey
2 x (400 g) cans diced tomatoes with herbs
5 cloves garlic
1 large bunch Italian parsley
200 g shredded mozzarella cheese
1 large lemon
200 g mixed salad greens
1 tsp dried oregano
1 tsp dried basil
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
1/2 tsp salt
1/4 tsp black pepper


Preheat your oven to 375°F (190°C).
Wash and slice the zucchinis lengthwise into 1/4-inch thick slices.
In a skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes. Drain any excess liquid.
Peel and mince the garlic. Add to the turkey along with the canned tomatoes, oregano, and basil. Simmer for 10 minutes.
In a baking dish, layer half of the zucchini slices, top with half of the turkey mixture, and sprinkle with half of the mozzarella cheese. Repeat the layers.
Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly.
While the moussaka bakes, prepare the salad. Wash and dry the mixed greens and parsley. Chop the parsley leaves.
In a small bowl, whisk together the juice of the lemon, balsamic vinegar, olive oil, salt, and pepper to create the dressing.
Toss the mixed greens and parsley with the dressing.
Serve the baked moussaka with the fresh salad on the side.
