Baked Triple Cheese and Spinach Gnocchi recipe

This is a warm, cheesy dish with soft gnocchi and spinach. It's baked until it's golden and bubbly. You mix cheese, milk, and gnocchi, then bake it. It's yummy with salad.

Ingredients

30 g unsalted butter
1.5 Tbsp all-purpose flour
450 ml whole milk
1 Tbsp fresh thyme leaves
50 g Parmesan cheese, grated
50 g Gruyère cheese, grated
50 g Mozzarella cheese, shredded
Pinch of nutmeg
Pinch of cayenne pepper
Salt and black pepper to taste
800 g gnocchi
100 g fresh spinach, roughly chopped

Preheat your oven to 200°C (392°F).

In a large saucepan over medium heat, melt the butter. Once foaming, whisk in the flour and cook for about 1 minute until it turns a light golden color.

Gradually pour in the milk, whisking constantly to prevent lumps, until the mixture is smooth. Continue to cook, stirring frequently, until the sauce thickens slightly.

Stir in the thyme leaves, grated Parmesan, Gruyère, and half of the shredded Mozzarella until the cheeses are melted and the sauce is smooth. Season with nutmeg, cayenne pepper, salt, and black pepper to taste.

If using shelf-stable gnocchi, cook according to package instructions, drain, and then add to the cheese sauce. If using fresh gnocchi, you can add it directly to the sauce without pre-cooking.

Fold in the chopped spinach until well combined with the gnocchi and cheese sauce.

Transfer the gnocchi mixture to a baking dish. Sprinkle the remaining Mozzarella cheese on top.

Bake in the preheated oven for about 25 minutes, or until the top is golden brown and the sauce is bubbling.

Remove from the oven and let it sit for a couple of minutes before serving. Enjoy with a side of green salad.
