Baked Teriyaki Tofu with Mixed Vegetables recipe

This is a yummy dish with baked tofu and colorful veggies. The tofu is covered in a sweet teriyaki sauce. The veggies are cooked until they are just right. It's a healthy meal that tastes very good!

Ingredients

350 g Extra-firm tofu
150 g Asparagus
150 g Baby bok choy
2 Yellow bell peppers
1 Bunch of green onions
1 Tbsp Olive oil
1 Tbsp Sesame seeds
3 Tbsp Soy sauce
1 Tbsp Maple syrup
1 Tbsp Mirin
1 Tsp Ginger, grated
1 Garlic clove, minced
1 Tbsp Cornstarch
1 Tbsp Water
1 Tbsp Sesame oil

Method

Preheat your oven to 220°C (428°F).

Cut the tofu into 2 cm cubes and pat dry with a kitchen towel. Place the tofu on a baking sheet, drizzle with olive oil, and bake for 20 minutes until golden brown.

Trim the asparagus and cut into 2-inch pieces. Cut the baby bok choy into quarters. Core the yellow bell peppers and cut into medium-sized chunks. Slice the green onions into 2-inch pieces.

In a small bowl, whisk together soy sauce, maple syrup, mirin, grated ginger, and minced garlic to create the teriyaki sauce.

In another small bowl, mix cornstarch and water to make a slurry.

Heat sesame oil in a large pan over medium heat. Add the asparagus, bok choy, bell peppers, and green onions. Cook for about 5 minutes until the vegetables are tender but still crisp.

Pour the teriyaki sauce over the vegetables and add the cornstarch slurry. Stir well and cook for another 2 minutes until the sauce thickens.

Remove the tofu from the oven and gently toss it with the vegetables and sauce in the pan.

Sprinkle sesame seeds over the dish before serving.
