Baked Spiced Sweet Potato Rounds with Creamy Honey-Mustard Sauce recipe


This is a yummy dish with round slices of sweet potatoes. They are baked until they're soft. You dip them in a sweet and tangy sauce made with honey and mustard. It's a fun snack or side dish!


2 large sweet potatoes, sliced into 1/4-inch rounds
1 tablespoon extra virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons tahini
1 tablespoon honey
1 tablespoon Dijon mustard
1 tablespoon water
1 tablespoon apple cider vinegar


Preheat your oven to 425°F (220°C) and get out a baking sheet.
Wash the sweet potatoes well and cut them into 1/4-inch thick rounds.
Put the sweet potato rounds on the baking sheet. Drizzle them with olive oil and sprinkle on the cumin, smoked paprika, salt, and pepper. Toss everything together so the rounds are well coated.
Spread the sweet potato rounds out in a single layer on the baking sheet.
Bake in the preheated oven for about 25 minutes, or until they are soft and have a little bit of a crispy edge. Make sure to flip them over halfway through baking.
While the sweet potatoes are baking, make the sauce. In a small bowl, mix together the tahini, honey, Dijon mustard, water, and apple cider vinegar. Stir until it's all smooth and creamy.
Once the sweet potatoes are done, take them out of the oven and let them cool for a few minutes.
Serve the sweet potato rounds with the creamy honey-mustard sauce on the side for dipping. Enjoy your tasty treat!
