Baked Sesame Chicken with Mixed Vegetables recipe

This is a yummy chicken dish with sesame flavor. Chicken and veggies are cooked on one pan in the oven. It's easy to make and tastes very good. You can eat it with rice or noodles.

Ingredients

1 crown broccoli, cut into florets
680 grams chicken thighs, boneless and skinless
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 red bell pepper, diced
1 yellow bell pepper, diced
1 large carrot, sliced
2 tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon rice vinegar
1 tablespoon cornstarch
2 tablespoons water
1 tablespoon sesame seeds, plus more for garnish
2 tablespoons water for sauce
1 tablespoon grated ginger
2 cloves garlic, minced

Method

Preheat oven to 400°F (205°C).

Place chicken thighs on a baking sheet and drizzle with olive oil, then season with salt and pepper.

In a bowl, mix broccoli florets, diced red and yellow bell peppers, and sliced carrots. Drizzle with a bit of olive oil and season with salt and pepper.

Spread the vegetables around the chicken on the baking sheet.

Bake for 20 minutes, until the chicken is nearly cooked through and the vegetables are tender.

While the chicken and vegetables are baking, make the sauce. In a small saucepan, combine soy sauce, maple syrup, rice vinegar, grated ginger, minced garlic, and 2 tablespoons of water. Heat over medium heat.

Mix cornstarch with 2 tablespoons of water in a small bowl to create a slurry. Once the sauce is simmering, add the cornstarch slurry and stir until the sauce thickens.

Remove the baking sheet from the oven and spoon the sauce over the chicken, then sprinkle with sesame seeds.

Return to the oven and bake for an additional 5 minutes, or until the chicken is fully cooked and the sauce is bubbly.

Garnish with additional sesame seeds before serving.
