Baked Salmon with Dill and Lemon-Infused Leeks recipe

This dish is a yummy fish meal. It has salmon that's baked until it's just right. The leeks are cooked with lemon and a special herb called dill. It's a fancy dinner that's not too hard to make!

Ingredients

4 salmon fillets (6 ounces each)
2 tablespoons extra virgin olive oil
1/2 lemon, juiced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 leeks, white and light green parts only
4 tablespoons unsalted butter
1/4 cup fresh dill, chopped
4 cloves garlic, minced
1/2 lemon, sliced for garnish

Preheat your oven to 425°F (220°C) and get the middle rack ready.

Make the salmon dry with paper towels. Put each piece, skin down, on a baking sheet. Brush them with olive oil and lemon juice. Sprinkle salt and pepper on top.

Clean the leeks and cut off the ends. Chop them into 1/2 inch thick rings.

Warm up a pan on medium heat. Melt the butter in it.

Put the garlic in the pan and cook it until it smells good, about 30 seconds. Add the leeks, half of the dill, a pinch of salt, and some pepper. Mix them up in the butter.

Turn the heat down low and let the leeks get soft, which takes about 10 minutes. Stir them now and then.

While the leeks are cooking, put the salmon in the oven. Bake it until it's not see-through anymore, which is about 10-15 minutes.

Take the salmon out of the oven. Put the leeks on plates and the salmon on top. Sprinkle the rest of the dill over it.

Add a slice of lemon to each plate for extra taste and a pretty look. Now it's ready to eat!
