Baked Salmon & Green Beans with Creamy Mustard Sauce recipe

This is a yummy fish dish with crunchy green beans. We bake salmon and green beans together. Then we make a creamy sauce with mustard to put on top. It's a healthy and tasty meal!

Ingredients

1 lb green beans, trimmed
4 salmon fillets (6 oz each)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup sour cream
2 tbsp Dijon mustard
1 tbsp honey
1 tbsp apple cider vinegar
1 tbsp fresh dill, chopped
1 lemon, cut into 4 wedges

Method

Preheat your oven to 425°F and put the oven rack in the middle.

Put the green beans on a baking sheet. Drizzle them with half the olive oil and sprinkle with salt and pepper. Toss them to coat.

Make space in the middle of the baking sheet and place the salmon fillets there. Brush the salmon with the remaining olive oil and season with salt and pepper.

Bake in the oven for about 15 minutes, until the salmon is cooked through and the green beans are tender.

While the salmon and beans are baking, mix the sour cream, Dijon mustard, honey, and apple cider vinegar in a bowl. Stir in the chopped dill.

When the salmon and green beans are done, take them out of the oven. Put some green beans and a salmon fillet on each plate.

Drizzle the creamy mustard sauce over the salmon and serve with a lemon wedge on the side.
