Baked Okra Bites with Mint Yogurt Dip recipe

This recipe turns okra into crispy, oven-baked bites. They're coated with spices and served with a cool mint yogurt dip. It's a tasty snack that's crunchy on the outside and soft inside.

Ingredients

250 g okra
1 tsp salt, divided
1 tsp chili powder, divided
1 tsp coriander powder, divided
1 tsp cumin powder, divided
2 tbsp olive oil
75 g rice flour
1/2 tsp paprika
1/2 tsp garlic powder
1 cup Greek yogurt
1 tbsp chopped mint
1 tbsp lemon juice
1 clove garlic, minced
Salt and pepper to taste

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Wash the okra and dry thoroughly with a kitchen towel. Slice each okra lengthways down the middle once, and then into quarters. Set aside.

In a bowl, mix together rice flour, 1/2 tsp salt, 1/2 tsp chili powder, 1/2 tsp coriander powder, 1/2 tsp cumin powder, paprika, and garlic powder.

Place the sliced okra in a separate bowl, drizzle with olive oil, and sprinkle the remaining 1/2 tsp each of salt, chili powder, coriander powder, and cumin powder. Toss to coat evenly.

Dredge the seasoned okra in the rice flour mixture until well coated and arrange on the prepared baking sheet in a single layer.

Bake in the preheated oven for 20 minutes, or until the okra is crispy and golden brown.

While the okra is baking, prepare the mint yogurt dip by combining Greek yogurt, chopped mint, lemon juice, minced garlic, and salt and pepper to taste in a small bowl.

Serve the baked okra bites hot with the mint yogurt dip on the side.
