Baked Honey-Soy Glazed Salmon with Brown Rice & Mixed Greens recipe

This is a yummy fish dish with a sweet and savory glaze. It has brown rice and a fresh salad with greens and fruit. It's not too hard to make and tastes really good!

Ingredients

4 (6 oz) salmon fillets
2 tbsp honey
2 tbsp soy sauce
1 tbsp olive oil
1/2 tsp garlic powder
1/4 tsp ground ginger
1 cup brown rice
2 cups water
1/4 tsp salt
4 cups mixed salad greens
1 medium carrot, peeled and shredded
1 small red bell pepper, thinly sliced
1 tbsp sesame seeds

Method

Preheat oven to 400°F (200°C).

In a small bowl, whisk together honey, soy sauce, olive oil, garlic powder, and ground ginger to create the glaze.

Place salmon fillets on a baking sheet lined with parchment paper. Brush the glaze over the top of each fillet.

Bake in the preheated oven until salmon is cooked through and flakes easily with a fork, about 12-15 minutes.

While the salmon is baking, rinse brown rice under cold water and drain. Transfer to a medium saucepan, add water and salt, and bring to a boil over high heat.

Once boiling, reduce heat to low, cover, and simmer until rice is tender and water is absorbed, about 30-35 minutes.

In a large bowl, combine mixed salad greens, shredded carrot, and sliced red bell pepper.

Divide the cooked brown rice among plates, top with a salmon fillet, and sprinkle sesame seeds over the salmon.

Serve with the mixed greens salad on the side.
