This recipe is for fish tacos with a sweet twist. We use baked cod and a fresh mango salsa. You'll mix spices, bake the fish, and chop up a yummy salsa. Then, put it all in a taco shell. It's a fun meal for everyone!

Ingredients

4 Cod Fillets
1 Tbsp Olive Oil
1 Tsp Salt
1 Tsp Black Pepper
1 Tsp Paprika
1 Tsp Garlic Powder
1 Mango
1 Small Red Onion
1 Jalapeno
1/4 Cup Fresh Cilantro
2 Limes
1/4 Red Cabbage
8 Corn Tortillas
1/4 Cup Greek Yogurt
1 Tbsp Honey

Preheat your oven to 375°F (190°C).

Place the cod fillets on a baking sheet. Drizzle with olive oil and season with salt, pepper, paprika, and garlic powder.

Bake the cod in the oven for about 15 minutes, or until the fish flakes easily with a fork.

While the fish is baking, peel and dice the mango, finely chop the red onion, jalapeno, and cilantro. Combine these in a bowl with the juice of 1 lime to make the mango salsa. Season with salt to taste.

Shred the red cabbage and set aside.

Warm the corn tortillas in the oven for a few minutes or on a hot skillet for about 30 seconds on each side.

In a small bowl, mix Greek yogurt with honey and the juice of the remaining lime to create a creamy drizzle.

Once the fish is done, break it into chunks.

Assemble the tacos by placing some shredded cabbage on each tortilla, add some baked cod, top with mango salsa, and drizzle with the lime yogurt sauce.
