The easiest one pan baked chicken fajitas with peppers, onions, mushrooms, and tomatoes couldn't be easier to make and is so delicious! Healthy, quick, and only one pan to clean!

Ingredients

1.33 lbs boneless skinless chicken breast, cut into strips
14 oz can diced tomatoes with green chiles
1 onion, sliced
1 red pepper, sliced
1 green pepper, sliced
1 cup mushrooms
2 tsp chili powder
1 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried oregano
1/4 tsp salt

Method

Preheat the oven to 400 degrees. Spray a glass baking dish with cooking spray.

Add everything to a glass baking dish and use your hands to toss together. The easiest way to do this is to add the chicken, tomatoes, and veggies. Then sprinkle on the spices and then toss.

Bake for 25-30 minutes until chicken is cooked through.
