Baked Cajun Chicken with Cheesy Broccoli and Quinoa recipe


This is a yummy dinner with chicken and veggies. It has spicy chicken, cheesy broccoli, and quinoa. You cook it in the oven and it's all on one pan. It's easy to make and really good!


4 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1 large head of broccoli, cut into florets
1 cup quinoa, rinsed
2 cups chicken broth
1 cup shredded cheddar cheese
1 teaspoon garlic powder
Salt and pepper to taste


Preheat your oven to 450°F (230°C).
Place the chicken breasts on a baking sheet and rub them with 1 tablespoon of Cajun seasoning, salt, and pepper.
In a bowl, mix the broccoli florets with olive oil, garlic powder, and the remaining Cajun seasoning.
Spread the seasoned broccoli around the chicken on the baking sheet.
In a medium pot, combine the rinsed quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
Bake the chicken and broccoli in the preheated oven for 25 minutes, or until the chicken is cooked through and the broccoli is tender.
Once the quinoa is done, fluff it with a fork and mix in the shredded cheddar cheese until it's melted and creamy.
Serve each chicken breast with a scoop of cheesy quinoa and a portion of roasted broccoli.
