Bacon and Cheddar Penne with Broccoli Recipe

This is a yummy pasta dish with crispy bacon, melted cheddar cheese, and healthy broccoli. It's a warm, cheesy meal that makes your tummy happy. You boil pasta, cook bacon and veggies, mix them with cheese, and eat!

Ingredients

150 g Bacon
1 Small Onion
2 Medium Potatoes
2 Cloves of Garlic
300 g Penne Pasta
150 g Sharp Cheddar Cheese
30 g Grated Mozzarella Cheese
1 Head of Broccoli
2 tbsp Olive Oil
Salt to taste
Black Pepper to taste

Method

Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 10 minutes. Drain and set aside, reserving 1 cup of the pasta water.

While the pasta is cooking, cut the bacon into small pieces. In a large frying pan, cook the bacon over medium heat until crispy, about 5 minutes. Remove the bacon and set aside.

In the same pan, add 1 tablespoon of olive oil. Dice the onion and add to the pan. Cook for 2 minutes until soft.

Mince the garlic and add to the pan with the onions. Cook for another minute.

Peel and cube the potatoes. Add them to the pan with the onions and garlic, along with a splash of water. Cover and let simmer for about 10 minutes, or until the potatoes are tender.

Cut the broccoli into small florets and add to the pan with the potatoes. Cook for another 5 minutes, or until the broccoli is tender but still bright green.

Dice the cheddar cheese and add it to the pan with the vegetables, along with the reserved pasta water. Stir until the cheese is melted and the sauce is creamy.

Add the cooked pasta and crispy bacon to the pan. Toss everything together until the pasta is coated with the cheesy sauce.

Sprinkle grated mozzarella cheese over the top, season with salt and pepper to taste, and serve hot.
