Avocado Egg Salad Sandwich with Cherry Tomatoes recipe


This is a yummy sandwich with eggs and creamy avocado. It has green leaves and sweet cherry tomatoes. You make it with bread and eat it for lunch or a snack. It's easy to make and very tasty!


8 large eggs
1 ripe avocado
1 tablespoon lemon juice
1/4 cup Greek yogurt
1 teaspoon Dijon mustard
1/2 teaspoon dried dill
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped chives
8 slices multigrain bread
1 cup arugula
1 cup cherry tomatoes


Place eggs in a saucepan, cover with water, and bring to a boil. Simmer for 10 minutes. Drain and cool under cold water. Peel and chop.
In a bowl, mash the avocado with lemon juice. Mix in Greek yogurt, Dijon mustard, dill, paprika, salt, and pepper.
Fold in the chopped eggs and chives into the avocado mixture.
Toast the multigrain bread slices.
Spread the egg and avocado mixture on 4 slices of bread. Top with arugula.
Cover with the remaining slices of bread to form sandwiches.
Serve each sandwich with a side of cherry tomatoes.
