Asparagus, Strawberry & Mixed Greens Salad with Feta & Walnuts recipe


This is a fresh salad with crunchy asparagus, sweet strawberries, and leafy greens. It has tasty feta cheese and walnuts on top. The dressing is made with lemon and honey. It's a yummy mix of different tastes and textures.


1/2 cup walnuts
2 medium bunches asparagus
5 oz mixed salad greens
2 cloves garlic
4 oz feta cheese
1 lemon, juiced
1 cup strawberries, sliced
2 tablespoons balsamic vinegar
1/4 teaspoon black pepper
3 tablespoons extra virgin olive oil
1 tablespoon honey
1/4 teaspoon salt


Wash the asparagus, snap off the tough ends, and cut diagonally into 1-inch pieces.
Heat a skillet over medium heat and toast the walnuts until fragrant, about 2-3 minutes. Remove from heat and let cool.
Peel and mince the garlic. In a small bowl, whisk together the garlic, lemon juice, olive oil, balsamic vinegar, honey, salt, and black pepper to create the dressing.
In the same skillet, add a little olive oil and the asparagus. Cook, stirring occasionally, until the asparagus is tender and bright green, about 5-6 minutes. Remove from heat and let cool slightly.
Wash and dry the mixed salad greens. Wash, trim the stem ends, and thinly slice the strawberries.
In a large bowl, combine the mixed greens, strawberries, and asparagus.
Crumble the feta cheese over the salad, add the toasted walnuts, and drizzle with the prepared dressing.
Toss everything together gently and serve the salad immediately.
