Asian Pork and Vegetable Stir-Fry with Basmati Rice recipe

This is a yummy dish with pork, veggies, and rice. It has pieces of pork, crunchy veggies, and rice. It's a little spicy and very tasty. You cook the rice, then stir-fry the pork and veggies, and mix them with a special sauce.

Ingredients

1 cup basmati rice
1 lb lean ground pork
4 baby bok choy, cut into 1-inch strips
8 oz sugar snap peas, halved crosswise
1 medium carrot, thinly sliced
4 fl oz chicken or vegetable broth
2 tbsp hoisin sauce
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp brown sugar
1 tsp cornstarch
2 tbsp vegetable oil
3 cloves garlic, minced
1 inch piece ginger root, minced
1 small bunch green onions, sliced
1/4 tsp black pepper
1/4 tsp salt

Method

Rinse the basmati rice under cold water, then cook it with 2 cups of water. Bring to a boil, then simmer covered for 15-18 minutes.

Mix the broth, hoisin sauce, soy sauce, vinegar, sugar, and cornstarch in a bowl to make the sauce.

Heat oil in a skillet over medium-high heat. Cook the pork until browned, about 5 minutes.

Add the garlic, ginger, and half of the green onions to the pork. Cook for 2 minutes.

Add the bok choy, snap peas, and carrot to the skillet. Stir-fry for 3 minutes.

Pour the sauce into the skillet. Cook until the sauce thickens, about 3 minutes.

Serve the stir-fry over the cooked rice. Top with the remaining green onions.
