Asian Chicken & Veggie Lettuce Cups with Almond Dressing recipe


This is a yummy dish with chicken and veggies wrapped in lettuce. It has a special sauce made from almonds. You cut the chicken and veggies, cook them, and wrap them in lettuce. Then you put the almond sauce on top. It's fun to eat with your hands!


2 heads of romaine lettuce
1 lb chicken breasts, boneless skinless
1 small bunch of basil
2 cloves of garlic
1 lime
1/2 cup almonds, roasted unsalted
1 yellow bell pepper
1 orange bell pepper
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper
1 tablespoon honey
1/4 cup almond butter
1/4 teaspoon salt
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon sesame oil


Wash and dry the lettuce and fresh produce.
Cut the yellow and orange bell peppers into small pieces and place them in a bowl.
Pick the basil leaves off the stems, discard the stems, and chop the leaves. Set aside in a small bowl.
Squeeze the juice of the lime into a bowl.
Peel and mince the garlic, then add it to the lime juice.
Chop the almonds coarsely and set them aside in a small bowl.
Heat a skillet over medium heat.
Cut the chicken into small pieces and season with salt and black pepper.
Add olive oil to the skillet and cook the chicken until it's golden brown and cooked through, about 5 minutes. Transfer the chicken to a bowl.
Separate the lettuce leaves and lay them out on a plate.
In the same skillet, add the bell peppers and cook until they're soft, about 4 minutes, then add them to the chicken.
For the sauce, mix almond butter, soy sauce, honey, sesame oil, and crushed red pepper with the lime juice and garlic.
Place the chicken and pepper mix into the lettuce leaves, drizzle with almond dressing, and sprinkle with basil and chopped almonds.
