Apple Walnut Chicken Salad Wraps with Grape Side Salad recipe


This is a yummy wrap with chicken, apples, and walnuts. It's wrapped in a soft tortilla. You also get a tasty grape salad on the side. It's fun to make and eat!


3/4 lb boneless skinless chicken breasts
2 sticks celery
1 Granny Smith apple
1 lemon
1/3 cup plain Greek yogurt
1/3 cup mayonnaise
1 tbsp Dijon mustard
1/2 lb red grapes
1/4 cup chopped walnuts
4 flour tortillas
1/4 tsp black pepper
1/4 tsp salt
1 tbsp honey
1 tbsp extra virgin olive oil
5 oz mixed greens


Season the chicken breasts with salt and pepper, then place them in a saucepan with enough water to cover by 1 inch. Bring to a boil, then simmer for 10-12 minutes until cooked through.
While the chicken cooks, juice the lemon into a large bowl. Mix in Greek yogurt, mayonnaise, Dijon mustard, a pinch of salt, and black pepper to create the dressing.
Dice the apple and celery into small pieces and add them to the dressing.
Slice half of the grapes and add them to the dressing, along with the chopped walnuts. Mix well.
Once the chicken is cooked, drain and let it cool for 5 minutes. Shred the chicken and add it to the dressing mixture, combining everything together.
Warm the flour tortillas according to the package instructions, then divide the chicken salad among the tortillas, rolling them up to form wraps.
In a separate bowl, whisk together honey, olive oil, and a squeeze of lemon juice to make a simple vinaigrette. Toss the mixed greens and remaining whole grapes in the vinaigrette.
Serve each wrap with a side of the grape and mixed greens salad.
