This apple butter is a sweet spread made from apples and spices. You cook apples with sugar and spices until they are very soft. Then you blend them to make a smooth, thick butter.

Ingredients

500 g Bramley apples, peeled, cored and chopped
300 g Royal Gala apples, cored and chopped
Zest of 1 lemon
150 ml cloudy apple juice
50 g dark brown sugar
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1/4 tsp ground cloves

Method

Place the apple cores and peels in a muslin bag along with the lemon zest. Put the bag in a large, heavy-based pan with the chopped apples and apple juice.

Bring the mixture to a simmer over medium heat, ensuring the muslin bag is submerged. Cover and cook on low heat for about 40 minutes, or until the apples are very tender.

Remove the muslin bag, squeezing out all the juice back into the pan. Discard the contents of the bag.

Transfer the cooked apples and liquid to a blender and blend until smooth.

Pour the apple mixture back into the pan, add the sugar and spices, and simmer over medium-low heat for 1 to 1.5 hours, stirring frequently, until the apple butter is thick and dark brown.

If the apple butter is too thin, continue cooking with the lid off, or transfer to a wide frying pan and cook over medium-high heat, stirring often.

Once the apple butter has reached the desired thickness, turn off the heat and let it cool.

Transfer the apple butter to sterilized jars and refrigerate for up to a month.
