Seared Sirloin with Spiced Sweet Potato Wedges & Sautéed Spinach recipe

This is a yummy dinner with juicy steak, spicy sweet potatoes, and healthy spinach. You cook the steak in a pan and make the sweet potatoes crispy in the oven. The spinach is cooked with garlic for extra flavor. It's a special meal that's not too hard to make!

Ingredients

4 sirloin steaks (6 ounces each)
2 large sweet potatoes
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
4 tablespoons olive oil, divided
1 teaspoon kosher salt, divided
1/2 teaspoon black pepper, divided
1 lb fresh spinach
2 cloves garlic, minced
1 tablespoon balsamic vinegar

Method

Preheat your oven to 425 degrees F (220 degrees C).

Wash and cut the sweet potatoes into wedges. Toss them with 2 tablespoons of olive oil, smoked paprika, cayenne pepper, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Spread the sweet potato wedges on a baking sheet and bake until they are crispy and tender, about 25 minutes.

While the sweet potatoes are baking, season the sirloin steaks with the remaining salt and pepper.

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steaks and cook to your desired doneness, about 4-5 minutes per side for medium-rare.

Transfer the steaks to a plate and let them rest.

In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for 1 minute until fragrant.

Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the balsamic vinegar and remove from heat.

Serve each steak with a side of spiced sweet potato wedges and sautéed spinach.
