Ingredients

1 tsp canola oil
1 small onion, peeled and chopped
2 garlic cloves, minced
1 tsp shrimp paste
1 Tsp Chilli paste
200 gms chicken breast, cut into small pieces
3 cups cold cooked rice
2 tbsp sweet soy sauce
1/4 cup mixed veggies
1 egg, beaten
Salt and pepper
FOR GARNISH
Sliced cucumber
spring onions

Method

Heat pan. Add oil and onions, garlic. Fry til they are softened

Add shrimp paste and chilli paste. Stir well

Add chicken and cook, stirring regularly, until it begins to change color. Add mixed veggies

Add rice and cook, spreading the rice on the entire cooking surface of the pan, for about 45 seconds or until grains start to sizzle and then toss to redistribute. Repeat a few times until rice is heated through.

Add sweet soy sauce and toss rice gently until to fully coated with sauce and evenly colored.

Add beaten egg mix and cook for a min.

Transfer to a serving plate. Garnish with spring onions and cucumber
