This is a warm, yummy soup with sweet onions and tasty beef broth. It has bread on top with melted Gruyère cheese. It's good for cold days and makes you feel cozy.

Ingredients

960 ml beef broth

1 x 200 g block Gruyère cheese

4 slices French baguette

2 large yellow onions

1/4 tsp black pepper

2 tbsp butter, unsalted

1/2 tsp salt

1 tbsp balsamic vinegar

1/2 tsp dried thyme

1 bay leaf

Method

Peel and thinly slice the onions.

In a large pot over medium heat, melt the butter until foamy.

Add the onions to the pot, sprinkle with salt, and cook until they are soft and caramelized, about 10-12 minutes.

Pour in the beef broth, add balsamic vinegar, black pepper, thyme, and bay leaf; bring to a boil.

Reduce heat to low, cover, and let it simmer for 20 minutes.

While the soup simmers, cut the baguette into slices and grate the Gruyère cheese; set aside.

Preheat the oven to broil and place the rack in the middle position.

Ladle the soup into oven-safe bowls, top each with a slice of baguette and a generous amount of Gruyère cheese.

Broil in the oven until the cheese is melted and golden brown, about 2-3 minutes, making sure to watch it closely to prevent burning.

Remove the bowls from the oven carefully, let them cool for a minute, and serve hot.
